You’ve probably heard of Yerba Mate by now, maybe from your favourite drive-by coffee place. It is now becoming popular in the states, but the only form I’ve seen it in here is in a tea bag, which is a very far cry from the original.

In order to make traditional mate, three things are needed: a gourd, cup or “mate”, a metal straw called a “bombilla”, and some loose tea called “yerba.”

Again, yerba is a type of tea. Yerba grows in South America. When mate is drank for the first time, the taste can often be very strong or bitter. Many say that mate has a smokey taste to it. In Argentina, it is common to include the stems of the yerba plant in the bags of loose yerba.

First you take your mate, and fill it about 2/3 full of yerba. Then, take your hand and place it over the top of the mate, and flip it over and shake it a few times so that the powder sifts through onto your hand. Flip the mate back over and brush your hand off. Now, pour some tepid or cool water into the mate until the yerba just absorbs it and swells up. Now, take your bombilla and put your finger over the end that you drink out of, so that when you place it in the yerba, it doesn’t get plugged. Anyway, now insert the bombilla into the wet yerba at an angle so that it rests on the edge of the mate.

Now, pour hot water directly over the bombilla until the mate is full. There should be some bubbles, or a light froth, which means the mate is ready to drink. Now you may drink from the bombilla and enjoy. However, mate isn’t drank to quench one’s thirst. It serves to initiate conversation, help you think, bond with friends and family; it is a tradition; culture.

Usually, mate is drank in a group. There is one server. This person makes the mate and starts to pass it around in a counter clockwise. When it is your turn to drink, you must drink it all before you hand it back. When you hand it back, it is then filled up and passed to the next person by the server. Each drinker usually finishes in a few minutes before passing it back. It is important not to say “thank you” unless you are done drinking, otherwise you won’t get anymore.

When you’ve been drinking the same mate for a while, you’ll notice that pretty soon the yerba starts to float. This means that the yerba is ready to be dumped out. It is “lavada” or “washed” and can be simply dumped out so that new yerba can be added.

As I said earlier, drinking mate is more social that it is practical. It’s about taking time to listen to each other and relax and enjoy time with the people you care about. If you are ever in a situation where someone offers you mate, don’t refuse! You may not like the taste at first, but give it a chance, and not only will you learn to like it, but you will make some new friends in the process.
